Sweet Potato Fishcakes

By Adrianna McDonald

This recipe is for the whole family. I love it and my kids do too! It contains only 3 ingredients and it’s super easy to make.

You will need:

  1. White fish – this recipe uses hammour but you can use cod as well (pan-fried, steamed or baked)
  2. Sweet potato (boiled or baked)
  3. Broccoli (steamed or boiled)

Quantities really depend on how many you need. If you’re following specific macros, you can easily make this meal fit your needs.

Start by weighing the potatoes after first boiling them (e.g. 200g), then cook your fish (about 150g after cooking) in coconut oil and add 150g of  broccoli which can be split with some in the fishcakes and the rest on the side.

Of course you can use some spices and herbs.

Mash everything together, add ready mixed spices and shape the mixture into patties. You can play with shape and size and if you are not watching your calories (e.g. your kids or other family members) toss the patties into some bread crumbs and fry them in organic butter.

Enjoy and stay healthy!
